What are good fats and what are bad fats? Contrary to previous diet plans, we actually need good fats in our body, and having good fats in our diets actually helps us loose weight, not gain it! As an easy rule, “good fats” are plant-based and in their natural form. Think: olive oil, sesame oil, walnuts, coconut oil, and avocados.
“Bad fats” are usually from mistreated animals, are processed, or are cheap plant-based oils that have been heated to excess, resulting in toxins. Think lard, chicken skins, butter, partially-hydrogenated ANYTHING, old frying oil. Moderation is the key, and there are always exceptions (such as fish oil).
Here’s an easy 5 minute recipe I’ve been making for lunch during my stay in Tepoztlan, Mexico. It is a satisfying vegan soup that combines two of my favorite good fats (avocado and coconut), and is so creamy you’ll forget how healthy it is! All you need is a blender. In addition both avocado and coconut are great for your skin! Avocado makes a great quick mask, and coconut oil is a great moisturizer.
Ingredients
- 1 tablespoon fresh ginger
- 1 large clove garlic
- 1 teaspoon cayenne pepper (or part of a hot pepper)
- 1/4 cup cilantro leaves
- Juice of 1 lime
- 2 avocados
- 2 cups coconut milk
- 3 cups vegetable stock or water
- salt and pepper to taste
Method
Throw all ingredients in the blender and blend until done! If you have a weak blender cut up the ginger and garlic into small pieces first. Soup can be served immediately or chilled first. I like serving it with some tomatoes to garnish. Best on the first day!
Makes four bowls of soup.
